in the new spoilers, they said that Dragon Eustace was going to crash into a rock and then breathe fire ..... so maybe this has to do with this?

You know from the new spoilers, it really sounds to me like
Dragon-Eustace will attack the sea serpent, but he'll take a beating in the process. He won't be able to kill it, forcing the crew of the Dawn Treader to do it with the whole squishing it on the rocks thing.

To me, that's a great way to build some emotion toward Eustace without it looking like he killed the sea serpent and earned his redemption.

I don't mind changes like that as long as the spirit of the book is kept intact. especially since the scenes are taken from the book and enlarged, rather than created out of thin air.

If you look in the trailer, the sea serpent is close to the rock Eustace is on. Dragon Eustace could breathe fire on it, fly away, and the Dawn Treader could come up behind it and push the distracted sea serpent into the rock that Dragon Eustace was perched on.

The Sea Serpent looks more like a worm than a reptilian creature, though otherwise it looks awesome.

Rhoop stabs Eustace and he flys back to Ramandu's Island where Aslan undragons him and I guess he puts the sword on the table with the others and the DI is defeated

Eustace gets bitten and dragged underwater by the sea serpent. I don't know if Rhoop actually does stab him in the movie. But he doesn't get eaten :P
